Traditional Shortbread Cookies

We took our children to a local symphony holiday program.  While there, we bought some delicious homemade shortbread cookies and I was inspired to try my hand at it.  As anyone reading here knows, you can google for any recipe and come up with hundreds.

I asked if anyone had a tried and true recipe for shortbread and a friend responded with the recipe below that she’d received from new friends newly arrived from Scotland.  My friend is a shortbread fan and says her friend’s shortbread cookies were delicious.

Because my friend hasn’t tried to make these yet, my go at it will be interesting as the directions from her friend were a little short on detail.

INGREDIENTS

  • 2 sticks butter
  • 2 cups plain flour
  • 1 cup cornstarch
  • 1 cup powdered sugar

DIRECTIONS

  1. Mix butter and dry ingredients together until it resembles breadcrumbs.
  2. Roll into sausage roll shapes. Cut into rounds.
  3. Bake 325F for 40-45 min.
  4. Dust with sugar when cool.
